Pico de Gallo (Tomato Jalapeño Salsa)
This fresh salsa adds a big burst of flavour to so many dishes! The jalapeños are key, so make sure you add them!
- 6-8 vine-ripened tomatoes diced
- 1 lebanese cucumber (or ½ telegraph cucumber) diced
- ¼ cup red onion finely diced
- ¼ cup pickled jalapeños (from a jar) chopped
- juice of ½ a lemon
- drizzle olive oil
- ½ cup coriander chopped
- Mix all ingredients together and season to taste with salt.
